Noma ha sido nombrado por Restaurant Magazine como el mejor restaurante del mundo dos años seguidos, 2010 y 2011. Es conocido además por la reinvención de la cocina nórdica, los platos y sus ingredientes cambian con las estaciones, y sólo utilizan productos locales. Pero lo que ha llamado mi atención hoy es el laboratorio en el que trabajan. El espacio tan amplio, la luz y la sobriedad en los colores deben inspirar las mentes de los chefs que investigan cómo llevar más lejos la evolución y el desarrollo de la cocina nórdica... pero lo hacen en un edificio donde los artífices del proyecto, 3XNS Interior, no pudieron utilizar ni pegamento ni ningún clavo, por expresa petición del propietario!
Noma has been named by Restaurant Magazine as the best restaurant in the world two years running, 2010 and 2011. It is also known for reinventing the Nordic cuisine, the menu and ingredients change with the seasons, and they only use local produce. But what caught my attention today is the lab where they're working. The space so large, the light, and sober colors should inspire the minds of chefs who research how to further the evolution and development of Nordic cuisine.... But they are doing this in a building where the architects of the project, 3XNS Interior, couldn't use any glue or nail, at the express request of the owner!
